Ceapairí has moved from a food truck in West Cork
to a bricks and mortar home in Ballydehob.
Same standards.
Same approach.
No shortcuts.
Simon is still curing his own meat.
Still chasing the perfect toasted sandwich.
Still building a menu that changes every week — because it should.
The Reuben remains the anchor.
The recipe hasn’t changed.
Sourdough still comes from Pike Deli.
What has changed is the flow.
Ceapairí now runs pre-orders — giving customers certainty, and giving the kitchen space to work properly.
